The man who farms foie gras has my respect. I spent over 20 years not eating meat, and when I did again I started looking toward more ethical consumption. I like his approach and wish it was a more prent mindset.

The common theme with these foods is that they were cheap and tasted good, and overtime they became more expensive as populations decreased and they became special occasion food thus more interesting to those who could afford it more often and example is lobster. or they were expensive from the start but just seen as special occasion food for poorer people ie. The middle class which again as the food became more scarce or seen as more special it gained price like fois grase. There’s a reason the poor people food that tasted bad is forgotten or still considered poor.
